Choc Coconut Granola

Here’s another easy-peasy granola recipe. I like that it is packed with fibre, iron, magnesium, protein, vitamin E, selenium. Oats are also a great source of beta- glucan which is beneficial for maintaining healthy blood sugar and cholesterol levels.

For variety you can add in raw nuts like hazelnuts, almonds, walnuts, cashews or brazil nuts (another fantastic source of selenium) for health fats and nutrients.

Choc Coconut Granola

Ingredients:

  • 2 cups of rolled oats

  • 1 cup of unsweetened coconut flakes

  • 1 cup of pumpkin seeds

  • 1 cup of sunflower seeds

  • 1/3 cup sesame seeds

  • 2/3 cup rice malt syrup.

  • 2 tbsp of cacao or cocoa

Preparation:

  1. Preheat oven to 160°C

  2. In a large bowl mix together all ingredients except the syrup.

  3. In a microwave proof bowl heat syrup in 10 sec increments until a runny consistency is achieved. Be careful when handling. Alternatively this can be done in a small saucepan over a low heat until syrup becomes runny.

  4. Add runny syrup to the bowl of seed & oat mix. Mix until all ingredients are well coated.

  5. On a lined baking tray spread mixture evenly across the tray.

  6. Bake for 20-30mins or until ingredients are lightly toasted. Be mindful to check on mix in oven frequently mixing up the mix on the tray to ensure an even cook. Typically the edges and base will toast faster.

  7. Remove from oven and to allow to cool. Granola will harden as it cools.

  8. Store in an airtight jar.

This granola stores well in the fridge. Best served as a topping to a smoothie or with yoghurt and fruit. Honesty its yum on its own!
