Easy Bircher Muesli

This Bircher muesli is as simple as mixing things together in a big bowl and sitting it in the fridge overnight. I intend this to be a base recipe. You can substitute the flax seeds for chia and you can use any milk you like. As for toppings you can go with fruit, nuts, seeds - but check out some seasonal variations below.

Easy Bircher Muesli

Ingredients:

  • 2 granny smith apples

  • 200g of rolled oats (not quick oats)

  • 2 cups of almond milk

  • 2 tsp of cinnamon

  • 1 cup of sunflower seeds

  • 3 tbsp of flax or chia seeds

  • honey - start with 2 tbsp and adjust to taste (optional)

Preparation:

  1. Using a mandolin, julienne (cut into matchstick size pieces) the granny smith apples. Alternatively you can do this using a knife or use a grater. Using a grater will require less milk, as the apples will release a lot of juice.

  2. Add the prepared apples to a bowl with the remaining ingredients. Mix together.

  3. Push the mixture down to allow all oats covered with milk. They do not need to fully submerged.

  4. Cover the bowl and place into the fridge for 1 hour.

  5. Take the bowl from the fridge and add honey, and mix well. This will break up and clumps and allow any oats to absorb more moisture. That's all there is to it.

It can be divided into individual container for meal prep but will also store well in the bowl.

Here’s some seasonal topping variations:

Summer: cherries, peaches, plums, mango, fresh berries, bananas
Autumn: chopped ripe pear and/or apple with a sprinkle of cinnamon.
Winter: 
sliced kiwifruit (Australian), chopped mandarins, oranges.
Spring:
Rhubarb compote (see below), stewed apple.

Rhubarb Compote:

Combine 4 stalks of rhubarb chopped small with ¼ cup of water, ¼ cup of honey, ½ teaspoon of vanilla, a squeeze of ½ of an orange in a small pot. Simmer until rhubarb is soft, almost jam like. Adjust water if the mix seems a bit dry. This method can also be used for berries, apples, or a combination. Honey can be reduced or omitted when using fruit that is a bit sweeter.
