Edamame Dip

Welcome! to the first recipe post of my website. I am trying this year to post more often and now include some recipes too. I’m endeavour to create a place where there are simple recipes to include into your week, but also ones that can be easily be adapted to your needs. So if you’re reading this welcome.

If you’re anything like me you love warm salty edamame fresh from their little pods. Here in Australia we are so lucky to be exposed to so so so much good food from all around the world and I am grateful to discover edamame!

Edamame is a great source of Vitamin K, folate and fibre and an excellent protein source! They are the little green soy beans you’ve seen in a poke bowl.

This recipe is by no means Japanese, its a bit of a mish mash. It probably resembles more a chucky green hummus. Sounds weird right? But trust me it’s delicious! WARNING, if you hate coriander, its going in! I want this recipe to be a chance for you to play around, if you hate coriander just leave it out and maybe sub in some more garlicky goodness. Making food should be fun, yummy, and nourishing for you body and your mind, so have a play around!

Ingredients:

  • 2 cups of cooked shelled edamame. You can also choose to buy pre-shelled edamame cover in boiling water.

  • 1/2 cup water

  • juice of one lemon

  • 1/2 cup extra virgin olive oil

  • 1/4 cup of coriander, roughly chopped.

  • 2 tbsp hulled tahini

  • 2 large cloves garlic grated.

  • salt and pepper to taste.

Preparation:

  • In a food processor blend the edamame with water, lemon juice and olive oil, scraping down the sides as you need. We want to get this into a smooth consistency before adding the coriander. Scrape down the sides as needed. You can leave it a bit chunky if you like.

  • Add the tahini, grated garlic and blend until it has a “pesto like” consistency. Now its time to taste! Add some salt and pepper.

  • Drizzle with some good quality olive oil on top.

  • Now its time to enjoy!

How to enjoy:

  • in place of guacamole or hummus

  • spread over some rice cakes with some tomato and cracked pepper.

  • enjoyed on toast with some poached eggs.

  • I even caught my mum double dipping it with some salsa (busted!).
