Peanut Butter Berry Smoothie

This smoothie is so good! I didn’t want it to end! I tend to make more ultra thick smoothies but this one was a bit thinner and the sweetness and tartness of the berries tastes AHHHHMAZING with some slightly salted peanut butter. I’m here for the food, but maybe in 2022, I’ll start using a proper camera! Here in the tropics you’ve got to get into that smoothie quick smart before it melts away or gets warm. Jam layer:

  • 1 cup frozen berries (raspberries or strawberries)

  • 1/4 cup of water but you can add more water if needed.

Blend together to make a thick jammy berry liquid. Pour into a container and set aside. Rinse out the blender for the peanut butter layer!

Peanut butter layer:

  • 2 tbsp peanut butter

  • 2 tbsp lupin flakes

  • 2 tbsp seeds (you can use chia, sunflower, linseed, pumpkin seeds)

  • 1 scoop of your favourite vanilla or unflavoured protein powder

  • 200g frozen banana

  • 1 ¼ cup of almond milk

  • any additional add ins (see below)

Blend together all the ingredients together. Add more milk if you prefer a smoother consistency. Layer the berry and peanut butter mixture into a glass. Alternatively, you can use the berry mix to coat the glass and then pour the peanut butter mix

Extra tips

This one is a great smoothie to add in some extra flavour. that might mean for you some extra peanut butter (some extra good fats) or some cinnamon (for blood sugar regulation). Keep in mind peanut butter is very energy dense. So I wouldn’t go too hard, even though it is delicious!

  • Peanut butter can be replaced with almond butter.

  • Cinnamon can be added to the peanut butter layer – start with 1 teaspoon.

  • I added in a fibre supplement to mine, you might choose to add in some LSA, ground flaxseed or some extra seeds to up the fibre intake.

  • Smoothies are a great way to sneak in some vegies. You can add in spinach, cooked cauliflower, or zucchini into the peanut butter layer. These veggies are really neutral so you wont be able to taste them.
